This is my simple Cauliflower and Pasta Bake.

 

It is a great way to get your children eating and enjoying Cauliflower.

 

The best part about this recipe is that it is simple and you can add almost anything to the bake.

I make this with and without pasta.

 

However, with my older boys heading into the teenage years this is a great way to load them up.

 

 

Ingredients:

1x Cauliflower – Chopped into medium sized trees

1x Pasta – Any type you that you prefer, however I find the Farfalle work well (use whole bag)

100gms – Bacon sliced and diced

1 1/2  Cups Grated Cheese

1Tbsp – Butter

2Tbsp – Plain Flour

Milk

 

Directions:

Firstly, chop your Cauliflower up into medium sized trees.

 

It is nice to have the Cauliflower chunky so that they don’t disappear into the bake.

 

Place them into a pot of water and bring to the boil.  Do not over cook, leave them slightly hard so that they don’t fall apart in the bake.

While Cauliflower is cooking, bring a pot of water to the boil and then cook your pasta.  Once again don’t over cook.

While your two pots are coming to the boil you can start by making your Cheese Sauce. 

On a low heat melt the butter over the stove in a small pot.  Once it has melted completely add your plain flour.

I usually take it off the heat while I mix the flour into the butter, this way it doesn’t stick to the bottom of the pot.

Add a touch of milk to your mixture and then place it back on the heat.  You will need to stir this continually until the mixture thickens, when it thickens you add more milk and keep stirring.

 

Keep adding milk and stirring until you have the desired amount and

your mixture is smooth and not lumpy.

 

Once you have your sauce to the desired amount and consistency turn off the heat and add a handful of your grated cheese.

Mix in till the cheese melts completely.

Now you are ready to add all the ingredients into your baking dish.  Slightly grease your dish with some butter.  Layer your Pasta, Cauliflower and Bacon.  Give them a gentle stir to mix them in.

Pour Cheese Sauce over the top, ensuring entire bake is covered.

Lastly sprinkle the remaining grated cheese over the top.

Place in your oven at 180’C (this will be different depending on your oven).  Bake for 20-25mins.

 

NB: Feel free to add Zucchini, Carrots and other Vegetables to this dish.

Onion and Potato work well if you decide to have a pasta free option.
